Use plain grilled, barbecued or poached mackerel when cold
4 mackerel fillets
1 tablespoon Mayonnaise
I tablespoon plain yogurt
1 red skinned apple – thinly sliced
4 spring onions – thinly sliced, diagonally
8 medium sized small salad potatoes steamed till just done and cut into chunks.
2 teaspoon chopped gherkins or capers (optional)
Chopped parsley – for garnish.
Mix everything together –and that’s it!
